This is a home made Thai Chile Condiment I make every few months. It's hotter than anything that is commercially available and tastes really good!
It's easy to make, the ingredients are: 3 ounces of Thai Chiles, 6 cloves of garlic, 1 teaspoon sugar, 1/2 cup fish sauce, 1/2 cup water and the juice of three limes.
Best to let it sit in the fridge a few days before using. Great on eggs, in soup, stir fries etc. Use in moderation and keep refrigerated. It keeps about six weeks.
