Dried Fruit Compote - Kompot

Dried fruit compote is a light refreshing drink made of dried fruit (apples, pears, raisins, prunes, apricots, etc.)
boiled in water with sugar and left to cool and infuse.
It's a traditional dish on Christmas Eve Supper.

Yummy! We have tamales on Christmas Eve! It is a leftover from the many Christmases we spent in México (Baja California Sur- the bottom part of the long thin state of México on the Pacific side). We always went to Christmas Eve Mass in a cast iron church made by Eiffel that washed ashore in Santa Rosalia, Baja California Sur. It was on it's way to California when the Hurricane hit, driving the ship carrying the church up the Gulf of California. I wish I had a picture of it. somehow, despite the number of times we were there, we never got a picture of it!
