Talking philosophy is immeasurably enhanced by a Perfect Manhattan, and what better place to seek answers to all the deep questions about life, reality, and the NCAA Tournament (though the Buffs disappointed, the Orange made up for it), than the Boulder Cafe, which has a daily happy hour from 3:30pm until closing?

Yes Traveller, we are far from the sea. But, I really like oysters. I don't eat any meat or fish, but as far as I know, bivalves aren't sentient, so I don't feel guilty for eating them (guilt at eating all kinds of food is a side-effect of teaching ethical issues classes that include a treatment of the ethical status of non-human animals). I trust in the power of refrigeration. So far, it hasn't come back to bite me! :)

It isn't the Manhattan that I find interesting, it is the casual eating of Oysters in...Colorado(?) and presumably far from the sea.

In case you're wondering, here's my recipe for a Perfect Manhattan: 2oz bourbon (I use Maker's Mark), 1oz sweet (red) vermouth, 1oz dry (white) vermouth, couple of drops of bitters. Shake well with ice, and pour into chilled cocktail glass. Add a maraschino cherry. A Perfect Manhattan differs from a regular Manhattan in having both sweet and dry vermouth. A regular Manhattan only has sweet vermouth (in addition to the bourbon), and is therefore too sweet.
